For the past few weeks, members of the Food Committee and the Deerfield branch of the Sunrise Movement have met with Dining Hall staff to calculate the carbon footprint totals of the various meals served at Deerfield.
For simplicity, we’ve then converted that data to miles driven by car. In the coming weeks, we also hope to include protein and carbohydrate amounts to assure students that a vegetarian or vegan diet does not mean forgoing important nutrients. Our efforts consciously provide consumers choice, while also demonstrating the environmental benefits of plant-based diets.
