The Fruit and Vegetable of January are root vegetables and citrus fruits!
Interestingly, if eaten in high amounts the pigment of carrots can be stored in our skin cells actually turning the skin orange. And citrus fruits come in many varieties beyond the well-known oranges, tangerines, lemons, and limes–consider the Buddha’s fingers.
