Sustainability in the Dining Hall

Deerfield Academy’s Dining Services program is a leader on our campus in the sustainability movement–from the simple philosophy to buy and do business with local sources as much as possible to the bold move to locally grown grass fed beef. Here is a top ten list of how Dining Services goes beyond the routine…
- Composting all food waste. Prep scraps, table scraps, and napkins all go to a local compost facility.
- Trans fat free cooking shortenings and oils and Fryolator Oil is recycled off-campus into Bio Diesel.
- Only organic fair trade coffee is served in the Dining Hall.
- Our new dishwasher reduced water usage.
- Deerfield Academy Dining Services now obtains all of their ground beef from the Lewis Family Farm in Essex, NY. The beef born on this unique farm is certified organic, and all cows are grass-fed their entire lives at this farm.Â
- Eliminated the use of trays in the Dining Hall.
- Our from-scratch kitchen limits use of processed foods.
- Our full scale bakery produces all baked goods served.
- We do not sell bottled water (anywhere on campus, in fact).
- Donate leftovers to shelter with the Second Helping program.
