Simple Couscous Recipe, as Seen at All School Meeting

Simple Couscous Recipe

Makes 1-2 servings

  • ½ cup Whole Wheat Couscous
  • 1 tsp Olive Oil
  • Pinch salt and pepper
  • ¾ cup very hot (boiling) water

Mix couscous with olive oil. Pour over hot water and gently stir. Cover tightly with either plastic wrap over other lid. Let sit covered for 15 minutes. Uncover, season with salt and pepper and fluff grains with a fork.

To dress it up, add your choice of:

  • dried fruit (soak in warm water and drained)
  • chopped nuts
  • cooked chicken
  • canned beans or chickpeas
  • lemon juice
  • cinnamon
  • curry powder
  • hot sauce
  • dry or fresh herbs

The simple recipe is a blank canvas. Make your own style! You can also substitute the water with chicken, beef or veggie stock.
